Square today announced that Salumerie, the Sydney Italian deli known as the House of Focaccia, is running on Square as it grows across the city. Founded by Donato Salomone in Potts Point in 2024, Salumerie now has five sites across Potts Point, Manly, the Sydney CBD, Bondi and Martin Place. A team of around 50 people makes roughly 1,000 focaccias a day. The newest site, in Martin Place, introduces Salumerie Express: a smaller format with its own identity that could become the basis for future franchising.

Everything started with bread
Salomone grew up in Napoli, where bread was part of every day. There was bread with olive oil at Nonna’s house, bread with Nutella in the morning, and bread with mortadella in the lunch his mum made for school. Those memories became Salumerie. It’s an old-school Italian salumeria with a more refined look and feel, true to tradition but fresh enough to win over a younger generation of Sydneysiders.
“Food didn’t need to be complicated to be special,” said Donato Salomone, Founder of Salumerie. “You don’t need many ingredients to make something amazing; you need good ones, and you need to treat them properly. Bread was always the starting point, so it made sense to put focaccia at the heart of Salumerie. House of Focaccia, or La Casa della Focaccia, is something that’s truly ours, from the bread to everything that goes inside it.”
One family, five shops
Salumerie has grown from a single Potts Point deli to five locations in two years. For Salomone, the challenge has never been opening shops. It has been keeping them consistent.
“Opening another shop is one thing; making sure every location has the same quality, warmth and energy is where the work happens,” said Salomone. “I want people to walk into any Salumerie and feel part of the same family.”
Martin Place takes that idea in a new direction. Salumerie Express, which Salomone calls “the little sister of Salumerie,” brings the menu to city workers on the go, and the team is refining it as a format it could franchise in the future.
Visibility across every shop
Salumerie in store uses Square for Restaurants whilst using the Square Register, Square Kiosk and Square Online to service customers. Square Dashboard lets Salomone see how each shop is performing whilst consolidating, Sales, Reporting and Customer Insights without pulling data from different systems. Square Loyalty keeps Salumerie stay connected and engaged with regulars. Square Shifts allows Salumerie to roster all their staff throughout the week.
For a brand that puts as much care into its shops as its sandwiches, design mattered too. Square hardware fits naturally into Salumerie’s spaces.
“Square has made it easier to have everything in one place,” said Salomone. “I can open my dashboard and understand how the business is performing across the shops without having to pull information together from different places. As we’ve grown, that visibility has become really valuable. Square Loans also gave us a big helping hand early on, when we needed support.”
What’s next
Beyond Express, Salomone has a bigger dream.
“I would love to open a Salumerie supermarket: my own Italian supermarket, with our food and the products I love, all under one roof,” he said. “Somewhere you can grab a focaccia, do your shopping and bring a little bit of Italy home.”
“Salumerie shows what happens when a founder gets the fundamentals right: great bread, a clear identity and real care in every shop,” said Dmitriy Shurapey, Head of Account Management, Square APAC. “Growing from one deli to five sites and around 1,000 focaccias a day takes serious operational discipline. We’re proud to give Donato and his team the visibility and tools to keep growing, whether that’s Salumerie Express or whatever comes next.”
